When a client approached us at Food Forward, seeking to transition their beloved recipes from restaurant fare to shelf-ready retail products, we knew it was a challenge worth tackling.

Optimising Production Processes

Our journey began with a thorough analysis of the client's recipes and existing processes. 

It quickly became clear that while their methods were suitable for restaurant settings, significant adjustments would be needed to meet the demands of retail production. 

We worked closely with the client team, meticulously measuring and adjusting recipes to ensure consistency and quality in every batch.

Streamlining for Efficiency

One of the key challenges we addressed was streamlining the production process. By eliminating unnecessary steps and optimising procedures, we were able to increase efficiency without compromising on taste or quality. 

This included addressing issues such as over-reduction and the need to add water, which were time-consuming and costly practices.

Adhering to Standards

Navigating the transition to retail-ready products was not without its challenges. The product needs to produce shelf-stable, acidified foods to be compliant with the necessary regulations and best practices. 

Fortunately this step is an important component of our expertise and we were able to advise on the best steps to become  compliant without compromising taste or freshness. 

Expanding their Empire

Finally we connected the team to a co-packer to give them saleable products to distribute via restaurants and their personal network. 

Despite the hurdles, the client remained enthusiastic and committed throughout the process. 

As they set their sights on expanding, including the possibility of building their own production facility, they do so with the confidence that they have the knowledge and support needed to thrive in the competitive world of retail food products.
